Plant-centric recipes for the Winter break

As you prep to hunker down and celebrate with your family and community during this holiday season, try throwing some plant-based recipes into the mix!

Strawberry Tiramisu Recipe

  • 100 ml coffee

  • 4 strawberries

  • 240 ml vegetable milk

  • 1 1/2 cups flour

  • 3/4 cups muscovado sugar

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1/3 cup vegetable butter

  • 1 tsp vanilla

  • 300 g tofu

  • 4 tbsp sugar

  1. Combine the milk, flour, brown sugar, baking powder, salt, butter, and vanilla in a bowl and mix with a whisk until all the ingredients are incorporated, then place on a pre-greased baking sheet and bake at 180C for 15 minutes and let it cool.

  2. Blend the tofu and sugar, and mix with a little water if necessary until you get a velvety cream.

  3. Cut the strawberries into squares.

  4. To assemble, cut the cake into small squares and dip it in coffee, place the first layer of cake soaked in coffee in a glass, followed by a layer of cream and tofu and another layer of strawberries. Repeat the procedure until you reach the end of the glass, and decorate with cocoa powder.
